The Five Steps To Tasting Wine.



A. See the wine from the top, side and tilted.

1. Top (Color and density)

2. Side (Clarity)

3. Tilted (Color changes on edges)

  1. Fairly light (Merlot, Pinot Noir) 
  2. Deep color (Higher tannins) 
  3. Clear watery color (Thin wine) 
  4. Brown color (Older wine) 

B. Smell the wine

1. Initial smell after pouring and not swirling.

  1. Closed bottle smell. 

C. Swirl the wine.

1. Makes the wine come alive.

2. Aerate

  1. Wine opens up.
  2. Aromas come to the top of the glass.
  3. Grapes have many compounds that are the same as flowers, fruits and vegetables. Earthy, wood aromas come from oak storage. 
  4. Forms legs (tears)
  • Caused by alcohol and glycerin- Good legs indicates the wine is bigger, riper, more mouth filling, and dense than those that do not have good legs. (tears) 

D. Smell The Wine

1. Take multiple short sniffs.

  1. Look for aromas of fruit, flowers, herbs, spices, vegetables, and wine barrel aromas like vanilla, smoke, earthiness, and anything else you can identify. 
  2. Do not obsess, just have fun. 

E. Sip the wine

1. Observe that what you smelled comes through to the taste.

2. Does the wine feel balanced?

3. Is the wine complex?

4. How does the palate feel?

  1. Rough
  2. Oily
  3. Dense

5. How is the finish?

  1. Long
  2. Short
  3. Does it change at some point with food or additional swirling?
